Good afternoon, and welcome to our farm-to-table kitchen!!! Today, it was the interns’ turn to cook. We found this tasty recipe for a lentil stew in a vegan cookbook. We used as many fresh ingredients as possible. It’s super easy to make a stew like this, all you need is your favorite veggies and spices! Fresh, rooftop grown food is preferred ;) Keep reading for a step-by-step of how we made this super simple stew!

Enjoy our recipe for mijote (french for stew)! This is a basic recipe, but we added vegetables from the garden that we wanted in it as well. Including some hot peppers and a white scallop squash. The recipe is for 4 people but we doubled it to feed everyone in the office! Let's get started.

Important first step: gather your ingredients. If you can, gather them from your garden. Here you can see all of our beautiful hydroponic tomatoes!

Here we have the queen herself, Emma, with the ingredients that we are going to turn into a stew that Bobby Flay would be jealous of.

Enjoy Emma chopping up some tomatoes. We are lucky enough here to have this fancy chopper tool, but using a knife the good old-fashioned way works, too. Make sure you peel everything before chopping it for the stew!

As we're chopping, the lentils are busy simmering on the stove. Once they're tender, they're all ready to go! They look ravishing.

After the ingredients are chopped, they go right on the stove. Carrots, onions, and garlic go first. After those are cooking for a few minutes, the zucchini, peppers, and squash go in. Don't put the tomatoes in yet!! They go in later. We also poured in some vegetable broth to add some flavor while they cook rather than just simmering them in water.

Don't forget to add the spices while the vegetables cook! We put in some fresh basil along with salt, pepper, and paprika.

Lentils and vegetables! yum!

Once the lentils are done, they can be strained and then added to the vegetable mixture, which can be seen in the video down below.

Let that simmer for a bit, then the tomatoes can finally go in!

After the tomatoes are added, let that simmer for 20 to 30 minutes, or until it's all cooked and looking like this....
